Skatole is a substance with an unpleasant flavor and odor released at cooking or heating of meat from entire male pigs. In this study,a microbe method was used to reduce skatole and the goal of this study was to optimize the conditions of skatole degradation by lactobacillus *** this study,response surface methodology(RSM) was used to optimize experimental conditions for skatole degradation by lactobacillus brevis and the best conditions were 7.8%of inoculum concentration,125mL of zymotic fluid,6 days of fermentation time,38.4℃of temperature,5.89 of *** degradation rate of skatole was 71.83%.
