A Novel Solution to Enhance the Oxidative and Physical Properties of Cookies Using Maltodextrin-Based Nano-Sized Oils as a Fat Substitute

This study investigated the effects of maltodextrin-based nanoemulsions as fat substitutes in cookies, focusing on the oxidative stability and physical properties. Full-fat cookies (control, C) and 50% fat-reduced cookies with nanoemulsions (FC) were produced. The addition of nanoemulsions increased the cookie diameter from 46.3 mm (control) to 56.1 mm and reduced the thickness, resulting in a desirable texture. Initial hardness values (30.3 and 45.8 N) were lower in nanoemulsion samples and remained reduced over a 90 day storage period. Black cumin oil-loaded nanoemulsions provided the lowest peroxide values (1.7, 2.7, and 2.4 mequiv O2/kg), maintaining oxidative stability during storage. Final free fatty acid (FFA) values ranged from 0.23% to 0.44% after storage. Thiobarbituric acid (TBA) values indicated slower lipid oxidation, with values ranging from 1.47 to 2.51 mg MDA/kg on day 0 and increasing to a maximum of 4.13 mg MDA/kg by day 90 in fat-reduced cookies. Among the tested formulations, nanoemulsions enriched with black cumin oil demonstrated the highest effectiveness, yielding enhanced oxidative stability and improved quality characteristics. This study presents an innovative strategy by utilizing maltodextrin-based nanoemulsions containing naturally antioxidant-rich oils as fat replacers, offering a clean-label alternative to improve the oxidative resilience and physical quality of cookies.

This study proposes a hybrid approach for visualizing cyberattacks by combining the deep learning-based GAT model with JavaScript-based graph visualization tools. The model processes large, heterogeneous data from the UNSW-NB15 dataset to generate dynamic and meaningful graphs. In the data cleaning phase, missing and erroneous data were removed, unnecessary columns were discarded, and the data was transformed into a format suitable for modeling. Then, the data was converted into homogeneous graphs, and heterogeneous structures were created for analysis using the GAT model. GAT prioritizes relationships between nodes in the graph with an attention mechanism, effectively detecting attack patterns. The analyzed data was then converted into interactive graphs using tools like SigmaJS, with attacks between the same nodes grouped to reduce graph complexity. Users can explore these dynamic graphs in detail, examine attack types, and track events over time. This approach significantly benefits cybersecurity professionals, allowing them to better understand, track, and develop defense strategies against cyberattacks.

Phishing is a type of cyber-attack aiming to steal people's confidential information using a bait. Smishing is a form of phishing that is carried out via SMS messages sent to mobile phones. Attackers intend to steal the private information of their victims through the content they send in their SMS messages. Therefore, the detection of smishing messages has a vital role in information security. In this work, a machine learning-based model is proposed to detect smishing messages. Experiments conducted on a relatively large dataset, which contains legitimate and smishing messages, have shown that the proposed model offers a promising detection performance. © 2019 IEEE.

S--Ideals: A Study in Commutative and Noncommutative Rings

In this paper, we introduce the concept of S - -ideals in both commutative and noncommutative rings. For a commutative ring R and a multiplicatively closed subset S , we show that many properties of -ideals apply to S - -ideals and examine their characteristics in various ring constructions, such as homomorphic image rings, quotient rings, cartesian product rings, polynomial rings, power series rings, idealization rings, and amalgamation rings. In noncommutative rings, where S is an m -system, we define right S - -ideals. We demonstrate the equivalence of S - -ideals and right S - -ideals in commutative rings with identity and provide examples to illustrate the connections between right S -prime ideals and -ideals.

The relationship between perceived stress and emotional eating in bus drivers: the effect of shift work

This study discusses the relationship between perceived stress and emotional eating based on shiftwork in city bus drivers. It was conducted with 1403 male city bus drivers working in Istanbul. Questions about the drivers’ physical activity and dietary habits, the Healthy Diet Index (HDI), Emotional Appetite Questionnaire and Perceived Stress Scale-10 data were collected and evaluated in two groups: shift and non-shift employees. It was found that the shift workers (SWs) have lower perceived stress, physical activity, HDI and positive emotional appetite averages. In addition, for SWs, a positive correlation was found between negative emotional appetite scores and physical activity and HDI scores. In conclusion, the drivers working in shifts were found to be slightly overweight and had lower physical activity levels, had lower HDI scores, and their nutritional status was more negatively impacted than their counterparts.

In this paper we investigate some Korovkin type approximation properties of the q-Meyer-König and Zeller operators and Durrmeyer variant of the q-Meyer-König and Zeller operators via Abel summability method which is a sequence-to-function transformation and which extends the ordinary convergence. We show that the approximation results obtained in this paper are more general than some previous results. The process of extracting meaningful rules from big and complex data is called data mining. Data mining has an increasing popularity in every field today. Data units are established in customer-oriented industries such as marketing, finance and telecommunication to work on the customer churn and acquisition, in particular. Among the data mining methods, classification algorithms are used in studies conducted for customer acquisition to predict the potential customers of the company in question in the related industry. In this study, bank marketing data set in UCI Machine Learning Data Set was used by creating models with the same classification algorithms in different data mining programs. Accuracy, precision and f- measure criteria were used to test performances of the classification models. When creating the classification models, the test and training data sets were randomly divided by the holdout method to evaluate the performance of the data set. The data set was divided into training and test data sets with the 60-40%, 75, 25% and 80-20% separation ratios. Data mining programs used for these processes are the R, Knime, RapidMiner and WEKA. And, classification algorithms commonly used in these platforms are the k-nearest neighbor (k-nn), Naive Bayes, and C4.5 decision tree. © 2018 IEEE.

In this paper, factors that affect the failure of students at the vocational High school for Girls were studied and a survey was performed to determine these factors. Since the collected data formed a large database, a data mining technique was used to more easily establish the correlations and rules. Based on content of the data and the subject of the study, the clustering method was selected as an evaluation tool. The collected data were separated into three clusters. Each cluster was investigated to determine the factors that play a role together in students’ failure, as well as the relations between them. Finally, the findings of the applied survey, taking into account the work aimed at reducing the causes of failure, are expressed. © Kamla-Raj 2016.
