Utilizing natural waste materials to decolorize synthetic and natural dyes offers a promising solution for mitigating environmental pollution. The adsorption isotherms and decolorization kinetics of curcumin onto Pondoh snake fruit seed (PSFS) biochar were predicted using ten isotherm models and the Generalized Fulazzaky (GF) equations, respectively, providing insights into the behavioral characteristics of the adsorption process. Simulations using the Harkin-Jura model demonstrated a good fit, with R ² values exceeding 0.6909 across PSFS biochar granular sizes of 13.65, 25.49, and 65.13 μm, indicating capillary condensation and multilayer adsorption, which validates the GF equations’ applicability. Applying the GF equations to adsorption kinetics simulations showed that declining external mass transfer (EMT) rates were offset by increasing internal mass transfer (IMT) rates. The increase in IMT rates ([ k L a ] d < 0.0 min −1 ) was less pronounced than the decrease in EMT rates ([ k L a ] f > 0.0 min −1 ), suggesting IMT governs curcumin adsorption’s rate-limiting step. PSFS biochar with an average granular size of 25.49 μm proved most effective for decolorizing 100 mg L −1 curcumin, exhibiting a global mass transfer rate range of 0.0020 to 0.0079 min −1 . Utilizing PSFS biochar for curcumin removal contributes to sustainable environmental remediation by advancing green technologies and informing dye effluent management strategies.

The purpose of this research was to produce an interactive CD media on the processing of continental pastry to improve the quality of learning in continental and culinary courses. The quality of media feasibility is based on the assessment of media experts who consider the criteria 'good,' with the percentage criteria earned at 77.5%. The evaluation of media experts who review the rules 'excellent' has a value of 90%. This media can be considered 'feasible' as it can be used for learning in terms of media and technical aspects.

Using design expert d-optimal for formula optimization of functional drink that enriched with moringa leaf extract (Moringa oleifera)

The nutritional content found in Moringa leaf can be used as a supporting substance, the utilization of Moringa leaf extract as for the enrichment of drink products that are ready for consumption such as instant drink products. The use of Moringa leaf extract as an instant drink is an innovation of a local food product to help girl adolescent that are already menstruating to prevention iron deficiency anemia. The purpose of this study was to determine the optimization of the instant drink formula enriched with Moringa leaf extract using the Expert D-Optimal Design. The research stages were conducted by: (1) preparation of the Moringa leaf extract, (2) determination of the fillers from cassava flour, modification cassava flour, and dextrins, (3) characterization of the instant drinks with selected fillers, (4) Moringa leaf enriched instant drink formula optimization using the program of Design Expert-12 the Mixture Design method. The research results based on the prediction of the program of Design Expert-12 show that the optimized formula from 38.01% moringa leaf extrac and 29.94% dextrins with desirability value is 0.521. Verification result has a water soluble time of 17.54 seconds; water insoluble part 0.002%; yield 61.15%; bulk density 0.72 g/mL; 64.65 degrees of brightness; moisture content 1.32%; ash content 0.27%; pH 3.22; antioxidant activity 0.00027; tannin content 0.07%; iron content 3.47 μg/mL and organoleptic values include color 4.15; aroma 3.99; taste 3.94; and overall 4.02.

The existence of lead (Pb) in soil has a significant ecological impact, resulting in a reduction in soil fertility. The present work effectively remediated soil contaminated with the heavy metal lead (Pb) through the application of biochar and Bacillus sp bacteria. Currently, there is ongoing research on the utilization of biochar amendments and Bacillus sp bacteria. The main objective is to assess the impact of these materials on the absorption of Pb and the activity of dehydrogenation enzymes. The findings indicate that both materials exhibit significant efficacy in absorbing Pb metal in contaminated soil over the incubation period from day 0 to day 42. The absorption capacity steadily increases until the concentration of Pb in the polluted soil reaches 1–2 ppm, using a biochar dosage of 10–30 ***⁻¹. Incorporating Bacillus sp bacteria at a concentration of 25 ***⁻¹ enhances the uptake of Pb metal. In terms of future prospects, the incorporation of biochar and Bacillus Sp has the potential to enhance the absorption of Pb metal, hence improving soil fertility in an environmentally friendly and cost-effective manner. © 2023

Quantum tunneling phenomenon allows a high-barrier reaction to occur even though thermal energy is not sufficient to surmount the barrier. The phenomenon has been suggested to exist in the isomerization of methylhydroxycarbene which occured at 11 K. Here we study the quantum tunneling that occured in the isomerization of methylhydroxycarbene to acetaldehyde and to vinyl alcohol based on density functional calculations. The isomerization pathways are determined under the effect of various solvents which are modeled by polarizable continuum model (PCM). We use Wentzel-Kramers-Brillouin (WKB) approximation to calculate the tunneling probability (T) and extend the usefulness of T into isomerization rate. The results show that the solvents give a significant effect on the isomerization rate of methylhydroxycarbene to acetaldehyde but an insignificant one on the isomerization rate to vinyl alcohol. © 2020 IOP Publishing Ltd. Improving The Quality of Smoked Shark Meat With Ozone Water Technique

The main problem of smoked shark process is the washing stage. The high content of urea in shark meat will cause ammonia odor in products that are not preferred consumers. The research aims to determine the effect of ozone immersion on improving the quality of smoke sharks. The research methodology used factorial complete randomization, with ozone immersion time (control; 5; 10; 15; 20 minutes) repeated 3 times. Data evaluation used analysis of variance (ANOVA) and Tukey differentiation test. The results show that the time for ozone immersion water has a very significant effect on total microbial, water content, urea content and sensory quality including the color, flavor and appearance of smoked shark meat. However, no significant effect on the acidity (pH) and texture of smoked shark meat. The ozone washing method can reduce urea content, deactivate microbes and improve the sensory quality of smoke sharks. The optimal water immersion time is 15 minutes showing optimal results, with total microbial results decreasing in 3 log cycles, from 1.7 x 105 CFU / gram to 9.0x102 CFU / gram, urea content decreasing 68.50%, pH 5.14; good appearance (4.28), bright brownish white (4.08), odorless ammonia (4.29), savory, non-acidic (4.12) and soft texture (2.63).

Bromelain is a glycoprotein that contains a single carbohydrate moiety group and displays proteolytic activity. Bromelain has long been known to act as an immunomodulator; however, the immunomodulatory activity of its carbohydrate moiety has been very rarely studied and is not well understood. This study aimed to predict the immunomodulatory activity of the carbohydrate moiety of bromelain (CMB) by evaluating it using the PASS server, and the binding affinities between CMB and various pro-inflammatory cytokines were analyzed using a molecular docking approach. This research was conducted by docking the CMB ligand to the following receptor proteins: interleukin-6 (IL-6), IκBβ/nuclear factor (NF)-κB p65 homodimer complex (IκBα/NF-κB p65), tumor necrosis factor-alpha (TNF-α), and IL-1β. The biological potential of CMB was predicted using the online PASS server. The results of the computational analysis indicated that the highest binding energy was identified between CMB and IκBβ/NF-κB p65 (−10.3 kcal/mol), followed by TNF-α (−9.7 kcal/mol), and IL-6 and IL-1β, with values of −8.2 kcal/mol for both. The CMB activity predicted by the Way2Drug PASS server indicated that this molecule is likely to display significant immunostimulant activity. These findings suggested that CMB can be considered a potential lead molecule for further drug development to identify agent that can prevent or cure inflammation and restore balance to the immune system. However, the predictions determined in this study remain to be validated in future in vitro and in vivo studies.

Fermented cassava as an alternative flour for pasta noodle

Cassava is widely cultivated in South East Asia countries like Indonesia. However, ordinary cassava flour cannot substitute wheat flour due to lack of gluten. Fermented cassava flour (fercaf) is a protein enriched cassava flour which is produced from a fermentation process of cassava flakes by lactic acid bacteria. Fercaf may serve as substitution to wheat flour, especially in pasta production. Nevertheless, a number of modifications should be exercise in product formulation to meet the ordinary 'wheat base' pasta product specifications. The current study was focus on these modifications i.e., addition of other flour and addition of hydrocolloids. The properties of pasta such as elasticity, yield, cooking weight, hardness, stickiness as well as sensory property were examined to determine the best pasta formulation. The results show that pasta made from fercaf with the addition of rice and corn flour gave strong and elastic texture while hydrocolloid addition increased water-binding of the pasta. The final pasta formulation included ratio of fercaf:rice:corn flour by 70:10:20 and addition of 2,5% xanthan gum.

The effect of size and solid content in hydrolysis of sweet potato starch using endogenous beta-amylase enzyme

Sweet potato contains significant amount of endogenous amylase enzymes. The endogenous enzymes can be used in maltose production from sweet potatoes to carry out pre-hydrolysis of the starch to some extent, follow by complete hydrolysis using external enzymes. The main objective of the current study is to investigate the effect of particle size and solid to liquid ratio in hydrolysis process of sweet potato starch using endogenous enzymes. The extent of hydrolysis process is measured by dextrose equivalent of the crude maltose solution. Hydrolysis process consists of liquefaction and saccharification process. The liquefaction process is carried out at 71.5°C and pH 6 for 25 minutes while saccharification process is carried out at 53°C and pH 5,5 for 72 hours. Dextrose equivalent is measured using Lane-Eynon method. The results show that the access of enzyme to the potato tubers is the key to hydrolysis process. The smaller size of tubers gives bigger surface area while lower solid-to-liquid ratio increases enzyme mobility but decreases sugar concentration. Base on the results, a simulation shows that the pre-hydrolysis of sweet potatoes using endogenous enzymes can save almost a half of enzymes required for traditional hydrolysis process.
