Improving The Quality of Smoked Shark Meat With Ozone Water Technique

The main problem of smoked shark process is the washing stage. The high content of urea in shark meat will cause ammonia odor in products that are not preferred consumers. The research aims to determine the effect of ozone immersion on improving the quality of smoke sharks. The research methodology used factorial complete randomization, with ozone immersion time (control; 5; 10; 15; 20 minutes) repeated 3 times. Data evaluation used analysis of variance (ANOVA) and Tukey differentiation test. The results show that the time for ozone immersion water has a very significant effect on total microbial, water content, urea content and sensory quality including the color, flavor and appearance of smoked shark meat. However, no significant effect on the acidity (pH) and texture of smoked shark meat. The ozone washing method can reduce urea content, deactivate microbes and improve the sensory quality of smoke sharks. The optimal water immersion time is 15 minutes showing optimal results, with total microbial results decreasing in 3 log cycles, from 1.7 x 105 CFU / gram to 9.0x102 CFU / gram, urea content decreasing 68.50%, pH 5.14; good appearance (4.28), bright brownish white (4.08), odorless ammonia (4.29), savory, non-acidic (4.12) and soft texture (2.63).

Bromelain is a glycoprotein that contains a single carbohydrate moiety group and displays proteolytic activity. Bromelain has long been known to act as an immunomodulator; however, the immunomodulatory activity of its carbohydrate moiety has been very rarely studied and is not well understood. This study aimed to predict the immunomodulatory activity of the carbohydrate moiety of bromelain (CMB) by evaluating it using the PASS server, and the binding affinities between CMB and various pro-inflammatory cytokines were analyzed using a molecular docking approach. This research was conducted by docking the CMB ligand to the following receptor proteins: interleukin-6 (IL-6), IκBβ/nuclear factor (NF)-κB p65 homodimer complex (IκBα/NF-κB p65), tumor necrosis factor-alpha (TNF-α), and IL-1β. The biological potential of CMB was predicted using the online PASS server. The results of the computational analysis indicated that the highest binding energy was identified between CMB and IκBβ/NF-κB p65 (−10.3 kcal/mol), followed by TNF-α (−9.7 kcal/mol), and IL-6 and IL-1β, with values of −8.2 kcal/mol for both. The CMB activity predicted by the Way2Drug PASS server indicated that this molecule is likely to display significant immunostimulant activity. These findings suggested that CMB can be considered a potential lead molecule for further drug development to identify agent that can prevent or cure inflammation and restore balance to the immune system. However, the predictions determined in this study remain to be validated in future in vitro and in vivo studies.

The increasing demand for sustainable materials has highlighted nanocellulose as a promising candidate due to its exceptional mechanical strength, thermal stability, and superior barrier properties. These attributes enable its application in diverse fields, including packaging, biomedical devices, and nanocomposites. This study investigates the valorization of edamame bean husks, a byproduct of the globally consumed legume snack, as a sustainable feedstock for nanocellulose production. Cellulose was extracted from the husks via delignification and bleaching, followed by a green and facile acid hydrolysis method employing organic acids (maleic acid, lactic acid, citric acid, and formic acid) to produce nanocellulose. The resulting nanocellulose exhibited a fibrillar morphology with particle sizes ranging from 7.59 to 17.51 nm, depending on the acid used. X-ray diffraction analysis revealed a crystallinity index ranging from 63.49 % to 67.24 %. Notably, acid hydrolysis significantly enhanced the thermal stability of the nanocellulose compared to both the raw husk and isolated cellulose. These findings demonstrate the potential of edamame agricultural waste as a valuable resource for sustainable and eco-friendly nanocellulose production, contributing to a circular bioeconomy. © 2025 The Authors

Fermented cassava as an alternative flour for pasta noodle

Cassava is widely cultivated in South East Asia countries like Indonesia. However, ordinary cassava flour cannot substitute wheat flour due to lack of gluten. Fermented cassava flour (fercaf) is a protein enriched cassava flour which is produced from a fermentation process of cassava flakes by lactic acid bacteria. Fercaf may serve as substitution to wheat flour, especially in pasta production. Nevertheless, a number of modifications should be exercise in product formulation to meet the ordinary 'wheat base' pasta product specifications. The current study was focus on these modifications i.e., addition of other flour and addition of hydrocolloids. The properties of pasta such as elasticity, yield, cooking weight, hardness, stickiness as well as sensory property were examined to determine the best pasta formulation. The results show that pasta made from fercaf with the addition of rice and corn flour gave strong and elastic texture while hydrocolloid addition increased water-binding of the pasta. The final pasta formulation included ratio of fercaf:rice:corn flour by 70:10:20 and addition of 2,5% xanthan gum.

The effect of size and solid content in hydrolysis of sweet potato starch using endogenous beta-amylase enzyme

Sweet potato contains significant amount of endogenous amylase enzymes. The endogenous enzymes can be used in maltose production from sweet potatoes to carry out pre-hydrolysis of the starch to some extent, follow by complete hydrolysis using external enzymes. The main objective of the current study is to investigate the effect of particle size and solid to liquid ratio in hydrolysis process of sweet potato starch using endogenous enzymes. The extent of hydrolysis process is measured by dextrose equivalent of the crude maltose solution. Hydrolysis process consists of liquefaction and saccharification process. The liquefaction process is carried out at 71.5°C and pH 6 for 25 minutes while saccharification process is carried out at 53°C and pH 5,5 for 72 hours. Dextrose equivalent is measured using Lane-Eynon method. The results show that the access of enzyme to the potato tubers is the key to hydrolysis process. The smaller size of tubers gives bigger surface area while lower solid-to-liquid ratio increases enzyme mobility but decreases sugar concentration. Base on the results, a simulation shows that the pre-hydrolysis of sweet potatoes using endogenous enzymes can save almost a half of enzymes required for traditional hydrolysis process.

Patchouli (Pogostemon cablin Benth.) is a plant that produces essential oils to be used for cosmetics, soap, antiseptic, perfume, pharmaceutical, insecticide and aromatherapy industries. One of the products produced from the patchouli plant is patchouli oil. This study aims to determine the content of chemical compounds contained in the essential oil of patchouli using the GC-MS analysis method to determine the molecular structure of the compound and separate the fractions in patchouli oil. Another method is the FT-IR analysis method to identify the functional groups contained in patchouli oil. The chemical properties of patchouli oil from the Blado area, Batang Indonesia, are traditionally distilled from fresh patchouli leaves and stems. The results of the GCMS analysis showed that there were 10 compounds with 4 peaks of dominant components which were the constituents of patchouli essential oil, namely Patchouli Alcohol (39.46 %), Delta-Guaiene (21.51%), Alpha Guaiene (20.13%), Alpha-patchoulena (9.01%). In the FTIR results carried out in the range of 4000-450 cm-1, various functional groups such as C=C, –CH2, C-H, C=O, O-H, C-O, =C-H, and N-H. This shows that patchouli oil is rich in alcohol, aromatics, and aldehydes.

Nutmeg oil has an important function as natural tropical biomedicine activity which commonly found in Batang region. This essential oil is one of the dominant traditional export product from Batang instead of patchouli oil, Clove oil, and lemongrass oil. The objective of the research was to analyze chemical compound of essential oil of nutmeg leaves from Batang region produced by traditional destillation. Research methods was conducted by GCMS method. The biomedical activity against some tropical diseases was analysed in-silico. The results showed that essential oil from nutmeg leaves showed potential antimicroabial activities in silico againts several tropical diseases in skin. The GCMS result showed 2-.BETA.-PINENE and .gamma.-Terpinene as the major compound with values 34,46% and 30,28%.

The Design of Automatic Sprinkler based on Arduino Uno Microcontroller

The purpose of this study was to design a microcontroller based automatic plant watering system. The method used was an experimental method using two sensors, i.e. soil moisture sensor (measure soil moisture) and ultrasonic sensors (measure the distance of rotary direction regulator for DC motors). Arduino board is preferable as the main controller due to its simplicity. Tool testing was conducted through trials on soil samples and performance tests when the tool was operating. The parameters observed were solar intensity (Lux), ambient temperature (°C), RH (%), water discharge (ml/s), DC motor axis rotation (rpm), AC and DC voltage (Volt), and soil moisture (%). The tool testing showed that the designed watering system could works properly with less than 10% MAPE. When the sensor read the soil moisture value below 70% setting point, the pump and DC motor were turned on. Whereas, when the soil moisture value achieved 80% setting point, the pump and DC motor were turned off. Performance test was conducted for three days of observation. The founding shows that the designed automatic watering system could successfully provide as much as 2.52 litre of water during approximately 6 minutes of watering period.

Remote monitoring systems in greenhouse based on NodeMCU ESP8266 microcontroller and Android

This study aimed to design a Greenhouse Remote Monitoring system and to immediately evaluate the monitoring system. The Monitoring system was designed based on the NodeMCU ESP8266 microcontroller to expectedly result an Android monitoring display as the output. This research was conducted in Greenhouse at Faculty of food and Agroindustrial technology, University of Mataram. An experimental method using greenhouse and hydroponic system was applied to this research. The monitoring system consisted of components that functionally related to each other (NodeMCU ESP8266, Android, DHT11 (temperature and humidity sensor), BH1750 (light sensor), Total Dissolved Solid (TDS) sensors, and other components that further supported by programming language. The observed parameters were the greenhouse temperature (°C); humidity (%); light intensity (lux); and the amount of TDS (ppm). The experiment indicated that the designed monitoring system successfully displayed what the sensor had read then translated it into Android. The average percentage of the Light meter reading errors using the BH1750 sensor (shown) on Android was 2.13%; the average percentage of the hygrometer reading errors using DHT11 sensor on Android was 0.14%; the average value of the thermometer reading errors as well as DHT11 sensor on Android was 0.76%; while the average TDS reading error on Android was slightly above 5% due to increasing temperature inside the greenhouse, especially in the afternoon period.
