The high pressure homogenization (HPH) process is a non-thermal technology that can be used to change the structure of fluid foods. Appropriate HPH treatment is benefit for uniform particle sizes distribution in juice and reducing pulp sedimentation. Cloudy apple juice was used as the experimental material in this study to evaluate the homogeneous pressure and homogeneous times (10-1, 10-2, 20-1, 20-2, 30-1, 30-2, 40-1, 40-2, 50-1, 50-2) on stabilities of juice. The indicators, such as, cloud value, cloudy stability, particle size distribution, ζ-potential and dynamic instability were investigated for juice stability. The results showed that, when homogenization at 20 Mpa for one time, the apple juice showed lower cloud value, higher cloudy stability, more uniform particle sizes, higher ζ-potential and lower dynamic instability. Therefore, the better HPH condition on stability of cloudy apple juice was 20 Mpa homogenizing for one time.

In order to determine optimum fasting time and transporting temperature, blood physiology and water ammonia nitrogen content of Megalobrama amblycephala simulation different transportation conditions were examined in summer. The results showed: temperature was dropped from 26 °C to 18 °C and 12 °C, Megalobrama amblycephala serum cortisol (COR), glucose (GLU), aspartate aminotransferase (AST) and alanine aminotransferase (ALT) kept higher level, fish was appeared stress response. In the 18 °C transport compared with 12 °C and 26 °C, serum ALT activity rise of fish was delayed. Fasting influence physiologies of Megalobrama amblycephala were little in transport process, fasting 36h merely to mitigate deterioration of water quality. The results demonstrated that temperature on physiological effects of Megalobrama amblycephala was main function in transport process, better temperature and fasting time of Megalobrama amblycephala summer transport were 18 °C and 36 h.

The differences of sensory qualities among 8 apple varieties were studied by the properties, including moisture content, color difference and texture using color difference meter and texture analyser. These three parameters had a significant effect on the sensory edible qualities of apple. The results showed that, there were great differences on fruit sensory qualities among 8 cultivated apple varieties. Water content of Ralls was the highest; the moisture contents of Orin and Indo were lower. Golden Delicious in color difference was clearly distinguished from other varieties. The hue angles of Golden Delicious, Orin and Indo all showed negative values, while other varieties showed positive values. The chromas of Golden Delicious and Indo were higher than others. In terms of texture, for Ralls, Wangshanhong, Orin and Indo, both fruit flesh hardness and peel hardness were higher, while the two indexes of Gloden Delicious were lower.

A new (8-hydroxyquinolin-2-yl)methylene picolinohydrazide derivative (L) has been successfully synthesized and characterized. The probe L displays high selectivity to Co^2+ in CH3CN/HEPES (1:1, V/ V, 10 mmol.L^-1 pH=7.4) with a fluorescence "ON-OFF" response. The Co^2+ ion recognition event possesses some distinct features including rapid response, high selectivity and sensitivity, good anti-interference ability and being applicable within a wide pH range. Based on job's plot and ESI-MS studies, the 1 : 1 binding mode was proposed. The binding constant of L and Co2+ is 1.63×10^8 L·mol^-1 and the detection limit is 1.15μmol·L^-1. Natural water samples experiments revealed that probe L can be potentially applied to the detection of Co^2+ in real environment.

Aromatic amphiphilic molecules(1) consisting of three biphenyl groups linked together with ether bonds as a rigid rod segment and poly(ethylene oxide) with the number of repeating units of 17 as a coil segment were synthesized, and their self-assembly behavior in the bulk state and aqueous solution was investigated. In bulk, molecules 1 self-assembled into 1-D lamellar structure in the solid state or smectic A phase in the liquid crystalline phase via the cooperative effects of ?-? stacking, micro-phase separation and hydrogen bond interactions. In dilute aqueous solutions, molecules 1 were observed to selfassemble into cylindrical micelles owned uniform diameter and length of hundreds of nanometers.
