From nut to Dulce de leche: Development of a vegan alternative – Physicochemical characterization, microbiological evaluation and sensory analysis

There is a growing trend in the consumption of plant-based raw materials and the use of nuts is a promising alternative in the development of non-dairy foods. This study aimed to produce vegan Dulce de leche with water-soluble baru and cashew nuts extracts (WSBE and WSCE). The WSBE and WSCE were produced using a nut: water ratio of 1:6 (w/v) with the subsequent addition of sucrose and heat treatment to produce Dulce de leche made with baru and cashew nuts (DLBN and DLCN). The nutritional composition of WSBE, WSCE, DLBN, and DLCN showed significant protein and lipids levels with high profile of monounsaturated fatty acids – MUFA and polyunsaturated – PUFA, and lower saturated fatty acids – SFA, leading to lower atherogenicity and thrombogenicity indexes. The Dulce de leche showed a balanced energy value (kcal) and lower hydroxymethylfurfural (HMF) levels. The sensory acceptance test showed a higher scores for WSBE and DLBN for the attributes evaluated, corresponding to “slightly liked” and “moderately liked” when compared to the WSCE and DLCN, with no differences for the purchase intention, which was classified as “probably would buy, probably would not buy”. Thus, the use of water-soluble nut-based extracts can be an alternative for the development of vegan Dulce de leche, contributing positively to consumer health, animal welfare, and the environment. © 2023 Elsevier B.V.

Plasticrusts manifest as a coating on intertidal rocks due to environmental exposure. They refer to crushed plastic debris that blankets rocks found along intertidal shorelines. This study significantly contributes to a better understanding of the occurrence of these novel plastic formations, shedding light on their potential pathways of formation during the Anthropocene era. The research provides comprehensive insights into the composition, origins, challenges, and effective management strategies for removing coastal plastic litter. The findings of this investigation offer valuable evidence regarding the formation and impact of these recently discovered plastic items in coastal regions, prompting discussions about their formation processes and their effects on the marine ecosystem. Recognizing that these newly emerged plastic litter pose a considerable threat to the marine environment is crucial. With their emergence, we face an environmental challenge, especially concerning the health of coastal ecosystems. Plasticrusts, when degraded, can release microplastics (MPs) and nanoparticles (NPs) into the surrounding environment. These micro- and nano-sized plastic particles pose significant ecological risks as they persist in ecosystems, potentially harming wildlife and entering the food chain, causing widespread environmental contamination. Studies in recent years have shown that aquatic pollution by microplastics(MPs)can be considered to pose additional stress to amphibian ***,our knowledge of how MPs affect amphibians is very rudimentary,and even more limited is our understanding of their effects in combination with other emerging ***,we aimed to evaluate the possible toxicity of polyethylene MPs(PE-MPs)(alone or in combination with a mix of pollutants)on the health of Physalaemus cuvieri *** 30 days of exposure,multiple biomarkers were measured,including morphological,biometric,and developmental indices,behavioral parameters,mutagenicity,cytotoxicity,antioxidant and cholinesterase responses,as well as the uptake and accumulation of PE-MPs in *** on the results,there was no significant change in any of the parameters measured in tadpoles exposed to treatments,but induced stress was observed in tadpoles exposed to PE-MPs combined with themixture of pollutants,reflecting significant changes in physiological and biochemical *** principal component analysis(PCA)and integrated biomarker response(IBR)assessment,effects induced by pollutants in each test group were distinguished,confirming that the exposure of *** tadpoles to the PE-MPs in combination with a mix of emerging pollutants induces an enhanced stress response,although the uptake and accumulation of PE-MPs in these animalswas ***,our study provides newinsight into the danger to amphibians of MPs coexisting with other pollutants in aquatic environments.

Cellulase production by Bacillus smithii QT03 using agro-industrial waste as carbon source

Currently, within the concepts of Bioeconomy and Circular Economy, technologies for transforming agro-indutrial waste into high-value products are rapidly advancing and gaining attention. Among these, microbial enzymes like cellulase have become valuable due to their extensive industrial application and potential to reduce cultivation cost, especially by using agro-industrial residues as substrates. This study aimed to optimize the culture conditions of Bacillus smithii QT03 for cellulase production and to partially characterize the enzyme. Several parameters were evaluated, including different agro-industrial wastes as a carbon source, incubation temperature, pH, incubation time, agitation, inoculum size, nitrogen source, and cellulase thermal and pH stability. B. smithii QT03 produces cellulase in the presence of malt bagasse as a carbon source (2 %), meat extract as a nitrogen source (1.5 %), at an incubation time of 48 h at 35 °C, stirring at 200 rpm, and 2 % inoculum. The enzyme reached maximum activity after 30 min at pH 7 and maintained 70 % of its activity for 24 h at pH 6. It also reached maximum activity at 70 °C and maintained 100 % activity after incubation at 55 °C for 3 h, and 58 % at 60 °C for 24 h. These results suggest that cellulase production by B. smithii QT03 using malt bagasse presents a promising, sustainable alternative for industrial applications. © 2024 The Authors

Although the toxicity of selenium (Se) and carbamazepine (CBZ) has already been demonstrated, the possible effects of freshwater fish co-exposure to these pollutants have not been explored. Thus, we aimed to evaluate the potential impact of Se and CBZ (alone and combined) exposure (both 5 µg/L) in Oreochromis mossambicus after 28 days. Exposure to CBZ, alone or combined with Se, significantly increases the "red blood cells" and "mean corpuscular volume." In the gills, malondialdehyde levels in the "CBZ" and "Se + CBZ" groups were lower than in the control group. Furthermore, the exposure to treatments induced a significant increase in protein carbonyl formation in gills and DNA damage in gill and liver cells. Still, acetylcholinesterase activity in the brain was not changed. Thus, our study provides insight into the toxicity of metals and pharmaceutical drugs and warns about the ecotoxicological risk posed by such mixtures. © The Author(s), under exclusive licence to Springer-Verlag GmbH Germany, part of Springer Nature 2024.

Background: Among the various types of cancer, breast cancer is the most incident among women. Due to the resistance to antitumor treatments, alternative treatments have been sought, such as metallic nanoparticles. Objective: This study aimed to evaluate the antitumor potential and cytotoxicity induction mechanisms of green synthesized AgCl-NPs and Ag/AgCl-NPs. Methods: The antitumor potential of nanoparticles was evaluated in breast cancer BT-474 and MDAMB- 436 cell lines treated with 0-40 μg/mL AgCl-NPs or 0-12.5 μg/mL Ag/AgCl-NPs through imagebased high content analysis method. Normal human retinal pigment epithelial 1 (RPE-1) cells were used for comparison. Results: The growth rate of the RPE-1 cells treated with nanoparticles was insignificantly affected, and no significant changes in cell viability were observed. In these cells, the nanoparticle treatments did not induce lysosomal damage, changes in ROS production, or reduction in the mitochondrial membrane potential. The level of BT-474 and MDA-MB-436 cell proliferation was markedly decreased, and cell viability was reduced by 64.19 and 46.19% after treatment with AgCl-NPs and reduced by 98.36 and 82.29% after treatment with Ag/AgCl-NPs. The cells also showed a significant increase in ROS production and loss of mitochondrial membrane potential, which culminated in an increase in the percentage of apoptotic cells. BT-474 cells also presented lysosomal damage when treated with the highest concentrations of both nanoparticle types and actin polymerization was observed after exposure to Ag/AgCl-NPs. Conclusions: Together, the results showed overall cytotoxic effects of both AgCl-NPs and Ag/AgCl- NPs towards breast cancer cells with negligible effects against healthy cells, which suggests their promising anticancer and biomedical applications. © 2024, Bentham science Publishers. This is a proposal for an exhibition of an artistic work to be assembled in this edition of ARTECH (2021). The work is called “Lux Cortina”. It is an interactive sculpture. Some considerations are made about the technologies and materials used in the production of sculptures and installations by this author. They are notes of methods to printing in 3D, with a minimum of commitment to the environment. Also is demonstrating the difficulties of moving away from the use products critical for the nature, when is used computer technologies. However, some options for reducing the impact for the environment are presented. The focus is printing with PLA thermoplastic (Polylactic Acid), which is made from plants, is biodegradable and fully recyclable, being in the category of bioplastics. The second focus is the use of materials that have a certain scale of friendliness, in certain contexts, such as silicon. To contextualize, is pointed out some uses those artists are making of 3D printing technologies, trying to indicate potentialities that collaboration between artists, architects and engineers can have, in terms of social, ecological, and global benefits for humanity, both for life on earth, as well as on other planets, like Mars.

Aluminium nano-powder has a small particle size, large specific surface area, and high surface energy, therefore when using it, the risk of fires or explosions is high. In this study, synchronous thermal analyser was used to determine the thermal reaction characteristics of aluminium nano-powder for various oxygen and nitrogen mixtures. The results showed that the oxidation behaviour of aluminium nano-powder could be considered to occur in four stages, according to the characteristic temperature points and polymorphic phase changes. Under experimental heating rates of 5, 10, 15, and 20 K/min, the mass gain and thermal effects of the samples were tested, and also for different oxygen concentrations of 9, 15, and 21 vol%. Changes in the microstructure of the samples were analysed. Oxide layer thickness was found to increase as temperature increased, and this trend was the same for mass change. Surface morphology images of the aluminium particles exhibited agglomeration, melting deformation, rupture, and fragmentation at the different pretreated temperatures of 500, 650, 800, and 900 °C. The results of this study could be used as a basis for exploring oxidation kinetics, and had significance for explosion-proofing technology, particularly with respect to aluminium nano-powder. © 2022 The Institution of Chemical Engineers

The Circular Economy is driven by sustainable strategies of management and the reuse of materials and power to try to decrease the demand of resources and minimize the environmental impacts. Aligned to said perspective, the Industrial Symbiosis (IS) is opposite to the linear production's logic, enabling the sharing of resources, waste, and by-products, that is, the circular flow of power, water, materials, and information. In the last few years, to improve these IS strategies, platforms and tools were created to intermediate this process and facilitate the match between those who demand and offer waste and resources, such as the online waste markets or e-marketplaces. From this perspective, the objective of this study is to evaluate how these tools contributed to the IS process, going beyond the problem of the local factor. For this purpose, ten online platforms, found in the literature, were selected. The analysis was made based on the identification of key elements, which enabled the creation of a list with different types of traded materials, sectors and areas served, how wide was the service, the year when the activities started and, ultimately, the business model adopted. As a result, the evaluation shows that these tools enhance the symbiosis process because they approach the parties and facilitate the identification of synergies. Generally, the use of online platforms widens the geographic scope of the IS processes, enabling the interaction of parties from different places and regions. Was observed that these tools are characterized by the use of intelligent systems, based on algorithms that identify and recommend relations, providing greater assertiveness and speed to the decision-making process. Among the research's findings, we must stress that the IS potential extends much beyond the reuse of waste. There are opportunities for other synergies, such as infrastructure and service sharing. Finally, it was highlighted that, although they present many benefits

The rapid growing application of language models (LLMs) in education offers exciting prospects for personalized learning and interactive experiences. However, a critical challenge emerges - the risk of "hallucinations," where LLMs generate factually incorrect or misleading information. This paper proposes Comparative and Cross-Verification Prompting (CCVP), a novel technique specifically designed to mitigate hallucinations in educational LLMs. CCVP leverages the strengths of multiple LLMs, a Principal Language Model (PLM) and Auxiliary Language Models (ALMs), to verify the accuracy and educational relevance of the PLM's response to a prompt. Through a series of prompts and assessments, CCVP harnesses the diverse perspectives of various LLMs and incorporates human expertise for intricate cases. This method addresses the limitations of relying on a single model and fosters critical thinking skills in learners within the educational context. We detail the CCVP approach with examples specifically applicable to educational settings, such as geography. We also discuss its strengths and limitations, including computational cost, data reliance, and ethical considerations. We highlight its potential applications in educational disciplines, including fact-checking content, detecting bias, and promoting responsible LLM use. CCVP presents a promising avenue for ensuring the accuracy and trustworthiness of LLM-generated educational content. Further research and development will refine its scalability, address potential biases, and solidify its position as a vital tool for harnessing the power of LLMs while fostering responsible knowledge dissemination in education.
