Smallholder coffee farmers can increase their income and competitiveness by increasing the quality of green beans produced. One of the suitable coffee bean processing technologies to be adopted in Telemung Village, Banyuwangi Regency, East Java is honey processing method. This method will produce green beans at twice the selling price of traditional processing. This quantitative research involved 15 respondents as smallholder coffee farmers. The sample in this study uses a purposive sampling technique, namely farmers who have received training on the honey processing method. The data were collected using a structured questionnaire with face-to-face interviews. The analysis showed a significant relationship between perceived ease of use and intention to adopt the technology (r= 0.724;p= 0.002), and this result was supported by a significant correlation between perceived ease of use and perceived usefulness (r= 0.730;p= 0.002). It can be concluded that farmers have a positive perception regarding the ease of use and usefulness of the honey process method. However, the barrier to technology adoption is marketing uncertainty and this technology has not been practiced in the local community. © Published under licence by IOP Publishing Ltd.

Whey cheese is a by-product of traditional or modern cheese-making processes. The yield of each cheesemaking reaches around 83% of the volume of milk *** can be processed into nata de whey by adding Acetobacterxylinum. The purpose of this study were to determine the effect of fermentation duration and differences in starter sources on the chemical quality produced by nata de whey. All samples were analyzed for fat, protein, cellulose and reducing sugars. this use study of two factorial randomized block design. The first factor is the difference in the starter (commercial and pineapple fruit extract) and the second factor is the length of fermentation with three replications. The results showed that the effect of fermentation time and the difference in starter sources on nata de whey had a very significant impact (P 0.05) on the content of protein, reducing sugar and cellulose content produced. © 2020 The Authors, published by EDP Sciences.

The objective of this study is to define the quality of sweet potato nutrition content in different processing techniques. processing techniques were roasted, steamed, fried, and boiled. The research method was to experiment complete randomized design with four treatments and five replications for each treatment. The variables chemical quality test were water content, fat content, protein content, ash content, carbohydrate content, and total energy. Among essential treatment of cardiovascular disorders are fibrinolytic proteases. Most thrombolysis agents are fibrinolytic enzymes from group of bacterial proteases. This work reports a potent bacterium isolated from fermented intestine of H. scabra, which could produce fibrinolytic protease with high thrombolysis activity. Bacterial selection was conducted based on proteolytic and fibrinolytic activities indicated as clear zone on skim milk and fibrin agar media, respectively. Crude proteases from the selected bacterial isolates were subjected to thrombolytic activity test based on gravimetric method, which results were confirmed after 7 repetitions. As result, 4 fibrinolytic protease-producing bacterial isolates HFSI-3, HFSI-4, HFSI-5 and HFSI-8 were obtained. Among them, HFSI-5 isolate identified as Bacillus tequilensis on the basis of the 16S rRNA gene sequencing and morphological properties produced crude protease with the highest thrombolytic activity. The thrombolytic activity of crude protease produced by B. tequilensis HFSI-5 is worthy of comparing to that of standard fibrinolytic enzyme Nattokinase showing its potential as thrombolysis agent. © Published under licence by IOP Publishing Ltd.

The use of symbionts is the most efficient way to obtain antibacterial bioactive compounds without the extraction of the host plant. Caulerpa racemosa or sea grapes are known to have symbiotic bacteria. This study was aimed to examine the antibacterial activity of symbiotic bacteria of C. racemosa. The research obtained two isolates from the inside of algae that formed an obstruent zone and of antagonist activity against Staphylococcus aureus and Salmonella typhi bacteria. Further analysis of the isolate coded CaD51 by paper disc diffusion showed that the bacteria produced an obstruent zone by 5.08 mm against S. aureus and had 50% Minimum Inhibitory Concertration (MIC) on both pathogenic bacteria. The bacteria reached their optimal growth rate at the 16th to 20th hour. The CaD51 were identified as gram negative bacteria, coccus, acid intolerant, not producing spores, not motile, and anaerobic facultative. Based on these key identification properties, the isolate CaD51 belongs to the genus Neisseria. © Published under licence by IOP Publishing Ltd.

PT. X is constantly lost profit allegedly due to inefficiencies in the processing of demersal fish fillets. This research was aimed to analyze the problem using the Kaizen method, a systematic analysis approach for continuous improvement. The research included the definition of the main problem, identification of the root causes on the employees, methods, materials and machine aspects, as well as identification of actions that are technically implementable and financially require less cost but produce maximum impact. The analysis of the production data in the frozen grouper fillets processing found differences in maximum yield in two production lines: 31.20% in Line 1 and 35.25% in Line 2, while the company's overall standard yield was 33%. These results indicated that interventions in Line 1 are needed to increase the yield by 2%. Root cause analysis found a numbery internal aspects that could be improved through Kaizen intervention, namely sorting raw materials, filleting, skinning, and trimming. Two interventions were recommended including employees training who in those aspects, and calibrating the main equipment. With such interventions, the inefficiencies worth Rp. 6.000,-/Kg of final product equivalent to Rp. 1.000.000.000,-/year of production could be overcome. © Published under licence by IOP Publishing Ltd.

This study focuses on the exergy analysis of the fish waste drying system using a rotary dryer. The effect of the initial mass of fish waste on the exergy parameters was carried out. The exergy balance was applied in the drying chamber. The exergy parameters analyzed include exergy inflow, exergy outflow, exergy loss, and exergy efficiency. In terms of exergy sustainability, the sustainability index, environmental impact factor, waste energy ratio, and improvement potential were also analyzed. As a result, it was found that the exergy inflow for all initial masses was not significantly different. Meanwhile, if the fish waste’s initial mass is decreasing, the exergy outflow and exergy efficiency increase, and exergy loss decrease. The sustainability index decreases, and the environmental impact factor increases with increasing initial mass. Waste energy ratio and improvement potential increase with increasing initial mass.

The aim of the study was to utilize kesumba seeds (Bixa orellana L) for coloring Biawak (Varanus salvator) leather dyeing and finishing methods against color fastness based on environmentally friendly. The ingredients used are kesumba seeds, Biawak leather, binder from white part of egg. Using the experimental methods, with four phases :(1) extraction of kesumba seeds wet and dry, (2) dyeing methods variations: (a) dye concentration from kesumba seeds, (b) dyeing durations (c) temperature (°C), Rpm of the drum 12, and crust Biawak leather, (3) finishing method using binder from white part of egg, and (4) testing Absorption and color fastness test on wet and dry rubbing, the assessment standard uses a gray scale and staining scale. Data analysis using Analysis of variance. The results shows that there significant differences in color absorption in the flash asverages are 80-70 % and nerf asverages are 60-40%, and results of Biawak leather fastness test for dyeing and finishing methods, dried kesumba seeds concentration 9%, dry rubbing discoloration 4-5 (good) fastness, orange-yellow color on the leather and wet kesumba seeds concentration 6%, 3-4 fastness (good enough), orange-red color on the leather and the results of wet rubbing are found to have an average color fastness value of 3 (enough) for wet and dry kesumba. It can be concluded that coloring from kesumba and binder material ingredients based on environmentally friendly can be used as a dyeing material and also for finishing as an alternative substitution of synthetic dyes in the Leather Industry.

Investigation of Escherichia coli contamination in fresh momar (Decapterus sp) in Ambon City fish market

The process of handling fresh fish by traders is still inadequate in terms of safety when handling fish after rigor mortis. Preliminary exploration in the market results in the fish that reach consumers being contaminated microbiologically in addition to chemical and physical contamination. Microbiological contamination is of great concern because it can potentially cause disease. This study investigated Escherichia coli contamination on momar (Decapterus sp) sold in three Ambon City fish markets, namely the Arumbae fish market, the Rumah Tiga fish market and the Wayame fish market. This study used descriptive analysis with E. coli detection testing. The results of the investigation of the presence of E. coli is positive for momar in the Arumbae market and it is already exceeding the maximum contaminant of ISO 7388-2009 E. coli bacteria in fresh fish. On the other hand, E. coli bacteria is not detected for momar from the Rumah Tiga market and the Wayame market. The potential for E. coli contamination in the Arumbae market may come from the washing water used.
