A potential inefficiency management: Kaizen application in the fillet processing of frozen demersal fish at PT. X Makassar-South Sulawesi

PT. X is constantly lost profit allegedly due to inefficiencies in the processing of demersal fish fillets. This research was aimed to analyze the problem using the Kaizen method, a systematic analysis approach for continuous improvement. The research included the definition of the main problem, identification of the root causes on the employees, methods, materials and machine aspects, as well as identification of actions that are technically implementable and financially require less cost but produce maximum impact. The analysis of the production data in the frozen grouper fillets processing found differences in maximum yield in two production lines: 31.20% in Line 1 and 35.25% in Line 2, while the company's overall standard yield was 33%. These results indicated that interventions in Line 1 are needed to increase the yield by 2%. Root cause analysis found a numbery internal aspects that could be improved through Kaizen intervention, namely sorting raw materials, filleting, skinning, and trimming. Two interventions were recommended including employees training who in those aspects, and calibrating the main equipment. With such interventions, the inefficiencies worth Rp. 6.000,-/Kg of final product equivalent to Rp. 1.000.000.000,-/year of production could be overcome.

Alginate is a polysaccharide extracted from cell walls and intracellular matrix of brown seaweed, and has been widely used for industrial purpose due to gelling capabilities in the presence of divalent cations. However, the characteristics of alginate extracted are depend on alginate gel strength and viscosity. The objective of this research was to investigate the effect of extraction time and Na2CO3 concentration on the characteristics of alginates extracted from Sargassum sp. by acid method. Alginate extractions were conducted by varying the extraction time for 1.5, 2.0 and 2.5 hours;and varying the Na2CO3 concentration of 1, 2 and 3 %. The characteristics observed are alginate yield, viscosity, pH, and water content. The alginates extracted using various Na2CO3 concentration and extraction time resulted alginates with low, medium and high viscosity. Furthermore, the yield, pH and water content of alginates extracted in this research had fulfilled the standard of Food Chemical Codex. © 2018 Published under licence by IOP Publishing Ltd.

The Influence of Sediment Loads on the Irrigation Discharge in The Upstream and Downstream of the Major River in Banyuwangi Regency

In Banyuwangi Regency there are four major rivers include the Tambong, Bomo, Setail and Baru river. Those rivers often overflow due to the high sediment deposition in the weir. The purpose of the study is to determine the influence of sediment loads upstream and downstream of the four rivers on irrigation impact. Suspended load analysis used method of Engelund and Hansen; Einstein; and Chang Simons & Richardson. Bed load analysis using methods of the Meyer-peter; Duboys; and Shields. Loads of sediment, both suspended load and bed load on the irrigation discharge in both the upstream and downstream of the major rivers in Banyuwangi greatly influences the sedimentation of irrigation channels which affect on fluctuations of irrigation discharge to irrigate land of Agriculture. The Baru River carried the largest sediment load in irrigation intake of Karangdoro Weir that carried Qs of 385.96 tons/year and Qb of 6.37 tons/year. It is necessary to have policies and efforts to control sediment and study about the maintenance of weirs periodically to maintain the volume of irrigation water so that it can increase agricultural productivity in Banyuwangi Regency.

Kopi luwak (civet coffee) is produced exclusively from coffee beans excreted by Indonesian palm civet or luwak (Paradoxurus hermaphroditus) and relatively has a high price. The aim of this research was to identify amino acid compositions of kopi luwak (green and roasted beans), its changing forms and its correlation to sensory profile. The coffee beans of kopi luwak were collected from six locations in Gayo Highland, Aceh-Indonesia. Amino acid compositions were analyzed by LC-MS and sensory profiles were performed using a cupping test based on Specialty Coffee Association of America (SCAA) procedures. The result showed that green and roasted beans had significant differences on their Alanine, Tyrosine, Cysteine and Arginine contents. Valine, Glutamine, Aspartic acid and Glutamic acid are considered as the main amino acids which have higher percentage in both green and roasted bean. Several amino acids are absence in green bean but presence in roasted bean or vice versa, such as alanine and arginine. Glutamic acid content was the highest among others, both in green bean and roasted bean. The sensory profile of civet coffee showed that all samples from various origins/sources were classified as specialty coffee because the obtained total score of cupping was above 80.

The aim of this research was to study the coffee fermentation with inoculation of Bacillus subtilis isolated from civet (Paradoxorus hermaphroditus) as starter culture. The quality of coffee was evaluated by sensory quality (cup test). Two treatments were carried out: control/coffee non-inoculated starter culture (treatment F) and coffee inoculated with a Bacillus subtilis starter culture (treatment G). The fermentations were conducted for 48 h in triplicate. A inoculation of Bacillus subtilis as a starter culture cause a decrease in pH and increase in total titratable acidity of coffee fermentation solution. A panel of five trained coffee testers (Q-grader from Gayo Cupper's Team) evaluated the samples. Ten sensorial attributes analyzed were fragrance/aroma, flavor, aftertaste, acidity, body, uniformity, balance, sweetness, cleanliness and overall. The result showed that the use of Bacillus subtilis starter culture improved quality of coffee fermentation. The aroma, flavour, aftertaste, body, balance and overall were increased. The cupping score total of coffee increased from 82.83 to 84.33. Metabolites analysis should be further investigated to confirm this result, especially organic acids compound.

The characteristics of palm oil plantation solid biomass wastes as raw material for bio oil

Indonesia is the largest palm oil plantations estate in the world. It reached 11,30 million hectares in 2015 and increased up to 11,67 million hectares in 2016. The advancement of technology recent, the solid waste of palm oil plantation can be re-produced become bio oil through pyrolysis hydrothermal process and utilized for biofuel. The purpose of this research was to analyze the characteristics of feedstock of bio oil of solid waste of palm oil plantations estate. The feedstock used was derived from solid waste of palm oil plantations in Riau Province. Characteristic analysis of waste oil included chemical compound content (cellulose, hemicellulose, lignin), ultimate analysis (C, H, N, O, S) to know height heating value (HHV). The result of analysis of chemical content showed that solid waste of palm cellulose 31,33 – 66,36 %, hemicellulose 7,54 – 17,94 %, lignin 21,43 - 43,1. The HHV of hydrothermal pyrolysis feedstock was 15,18 kJ/gram - 19,57 kJ/gram. Generally, the solid waste of palm oil plantations estate containing lignocellulose can be utilized as bio oil through hydrothermal pyrolysis. The CG-MS analysis of bio oil indicated hydrocarbon contents such as pentadecane, octadecane, hexadecane and benzene.
