A brain-computer interface (BCI) establishes a direct communication pathway between the human brain and a computer. It has been widely used in medical diagnosis, rehabilitation, education, entertainment, etc. Most research so far focuses on making BCIs more accurate and reliable, but much less attention has been paid to their privacy. Developing a commercial BCI system usually requires close collaborations among multiple organizations, e.g., hospitals, universities, and/or companies. Input data in BCIs, e.g., electroencephalogram (EEG), contain rich privacy information, and the developed machine learning model is usually proprietary. Data and model transmission among different parties may incur significant privacy threats, and hence privacy protection in BCIs must be considered. Unfortunately, there does not exist any contemporary and comprehensive review on privacy-preserving BCIs. This paper fills this gap, by describing potential privacy threats and protection strategies in BCIs. It also points out several challenges and future research directions in developing privacy-preserving BCIs. © 2024, CC BY.

3D printing is characterized by customizability, rapid prototyping, on-demand manufacturing, and decentralized/distributed manufacturing. Minced meat/surimi has high nutritional value, and by changing the composition, rheological and textural properties of the materials, 3D printed meat and aquatic products can meet the needs of special populations such as infants, young children, and the elderly, to solve the problem of swallowing difficulty, food accumulation or indigestion. However, minced meat/surimi is not directly printable, and the multi-component complex system composed of protein-polysaccharide-fat affects its printability, and the structure-property changes of this system during the printing process in relation to interactions and nutrient digestion still need to be explored in depth. This paper starts with the 3D printing process to illustrate the structural characteristics of raw materials on printability, stability, and adaptability. The digestive characteristics of different people for 3D printed minced meat/surimi products are described from the perspective of nutrition. 3D printing technology has a great potential to achieve precise printing in complex formulations, thus realizing the goal of providing specific nutrients to target populations.

The Effect of Freeze‒Thaw Cycles on the Physicochemical Stability and Nutritional Composition of Camel Milk

Pretreatment for dairy processing sometimes requires freezing and thawing to ensure a steady supply of fresh raw milk. On this basis, a series of studies were conducted to ascertain the impact of freeze‒thaw cycles on the physicochemical stability and nutritional quality of camel milk. The findings demonstrated that while the lipid content and apparent viscosity of camel milk were significantly reduced, the acidity and quantity of short- and medium-chain free fatty acids were enhanced by repeated freeze‒thaw cycles. Freeze‒thaw cycles have been demonstrated to result in an increase in protein oxidation in camel milk, which in turn has been observed to give rise to a shift in the secondary structure towards random coils. The particle size distribution and microstructure of camel milk exhibited aggregation of the droplets, which consequently reduced the physical stability of the milk emulsion. The results of this study may help to deepen our understanding of the quality characteristics of raw camel milk materials while providing methodological references and scientific support for the storage of raw camel milk on small farms. © 2024, The Authors. In this study, the synergistic effects of nisin and salicylic acid (SCA) on Staphylococcus aureus and its potential application as food preservatives were investigated. The antimicrobial activities of nisin (MIC=500 μg/mL) and SCA (MIC=250 μg/mL) when used alone were determined. The FICI was 0.5, which confirmed that nisin and SCA had synergistic antibacterial effects against S. aureus. Based on these findings, the synergistic mechanism of nisin and SCA was further explored. This combination enhanced cell membrane destruction, increased the release of cell contents, reduced ATP synthesis, and inhibited biofilm synthesis. In addition, the combination demonstrated excellent DNA binding ability. The combination inhibited S. aureus infection in whole/skimmed ultra-high temperature sterilized milk at 25°C. Therefore, the combination of nisin and SCA is expected to be a promising strategy for food preservation. © 2024, The Authors. All rights reserved.

To address the quality degradation in surimi products due to lipid loss, the oil-modified starch made by amylose corn starch and fish oil was used to investigate the comprehensive structural characterization of fish oil-modified starch and its influence on surimi product quality. The results indicated that hydrothermal treatment temperature played a key role in the successful preparation of fish oil modified starch. At a modification temperature of 90 °C, the CI of fish oil-modified starch reached a maximum of 59.42 %, with the lowest transparency of 3.58 %. Compared with native starch, oil-modified starch demonstrated reduced crystallinity (11.55 %) and gelatinization enthalpy (1047 J/g). Furthermore, it exhibited increased viscosity and swelling power, as well as improved oxidative stability. Upon incorporation into surimi, the hydrogen bonding within the system was enhanced, the denseness and continuity of the gel network were increased. Freshness indicator films were prepared with anthocyanins (ACNs)-encapsulated whey protein (WP)-propylene glycol alginate (PGA) nanoparticles and polyvinyl alcohol (PVA) and then applied to the freshness indication of the bighead carp heads. The characteristics of films with and without ACNs encapsulated were compared. ACNs was fixed in the film successfully according to the analysis of SEM and ATR-FTIR. The results of light transmission, water vapor transmission rate, and stability analysis indicated that the film possessed good light blocking property, water barrier property, and stability with ACNs encapsulated. The freshness indicator films changed from rosy red to gray in the application experiments of bighead carp heads at 4 and 25 °C, and the color change (ΔE) of the films had good linear correlations with the change of freshness indexes. Therefore, the encapsulation of ACNs has provided a more stable and accurate freshness indication of bighead carp heads during storage and transportation. © 2023, The Authors. All rights reserved.

Investigation of the Antioxidative Potential of Meretrix Meretrix Linnaeus Derived Peptides from Simulated Gastrointestinal Digestion: In Vitro and in Silico Insights

This investigation sought to identify antioxidative peptides derived from Meretrix meretrix Linnaeus (MML) throughout simulated gastrointestinal digestion (SGD) via in vitro and in silico strategies. The study demonstrated that hydrolysates from MML captured at various SGD phases showcased robust antioxidative activity. These hydrolysates also displayed a protective role against hydrogen peroxide-induced stress in Raw 264.7 cells. Notably, hydrolysates sourced from the intestinal phase of digestion (MMLHs-I) markedly inhibited the reduction of cell viability, limited the generation of reactive oxygen species under oxidative stress conditions, and promoted the activity of key antioxidant enzymes including superoxide dismutase, catalase, glutathione peroxidase, and glutathione reductase, thus amplifying the cells' antioxidative defense system. Through nLC-MS/MS analysis, 105 peptides tracing back to 18 parent proteins were pinpointed in MMLHs-I, with 18 of these peptides previously reported in the BIOPEP-UWM database. Subsequent in silico analysis, alongside empirical antioxidant activity assays, pinpointed the peptide WLV as an exceptional antioxidative agent, demonstrating an IC50 of 0.125 mg/mL in the ABTS assay and an impressive 604 μM Trolox/μg in the ORAC assay. The outcomes highlight MML's promise as a novel source of antioxidative peptides, positioning peptide WLV as a potentially valuable addition to functional foods designed to combat oxidative stress. © 2023, The Authors. Effect of ultrasound-assisted pH-shifting treatment on the physicochemical properties of mung bean protein/milk protein concentrate hybrid protein systems and its application in hybrid yogurt gels

This study aimed to explore the impact of ultrasound-assisted pH-shifting on the physicochemical characteristics of a mung bean protein/milk protein concentrate (MBP/MPC) hybrid protein system and assess its applicability in hybrid yogurt gels. The results indicated that ultrasound and pH-shifting synergistically improved the physicochemical properties of hybrid protein system, increasing solubility (86.92 %–91.98 %), enhancing emulsification (4.08 %–53.65 %), and reducing particle size (8.02 %–87.87 %). Additionally, ultrasound-assisted pH-shifting significantly decreased α-helix and β-turn contents while increasing random coils content, without altering the protein's primary structure. In hybrid yogurt gel applications, ultrasound-assisted pH-shifting markedly improved gel texture, water-holding capacity, and elasticity. However, when the MBP/MPC ratio exceeded 60:40, the hybrid gels exhibited inferior properties compared to mung bean protein single yogurt gels, even after treatment. The best gel quality was attained at an 80:20 MBP/MPC ratio, where hydrophobic interactions were identified as the dominant factor in gel network formation. These findings suggested that the quality of hybrid protein yogurt gels strongly depends on the MBP/MPC mixing ratio. This study provides a theoretical basis for applying ultrasound-assisted pH-shifting in MBP/MPC hybrid protein yogurt gel systems.
